La Cave Apicole

In the beginning, La Cave Apicole was just Sylvain Respaut. Then Olivier Cros joined him. When I met Sylvain in 2012, he was showing his first vintage. Pure Grenache. Already very soft, deep fruit and a beautiful lightness. This signature has developed further with Olivier. They work with indigenous grape varieties such as Lladoner pelut. "Picoler" means to drink in French. But "Apicole" also comes from the former beekeeper and apiculturist, which Sylvain was before. A nice play on words.
